Winter is officially here and nothing beats a bowl of steaming hot soup to warm up on a cold evening.
So today I thought I’d share with you a quick, delicious and heart-warming option. Perfect for those mid-week evenings when time is short, but you still need to feed the family a nutritious dinner.
Soup in Minestrone style, with lots of vegetables, beans and pasta, is one of those meals that appeals to everyone around the table, including the little ones. The other significant advantage is its versatility, as you can use whatever vegetables you’ve got in your veggie box, most canned bean types and any small pasta shape you might have in the pantry. Feel free to adapt the recipe to suit your supplies.
My top tip, when parents ask me how to encourage kids to enjoy new foods, and we be more adventurous, is to get them in the kitchen and involved with the cooking. Children are much more likely to try something if they’ve helped make it!
I’ve also included a simple recipe for Herb and Cheese Crostini for your little assistant. These are delicious when made with crusty bread like a baguette or ciabatta but also cute and fun from cut-out shapes of sliced wholemeal bread - just perfect to dip in your delicious soup.
